Cheese rings with caramelized pear compote and fermented red cabbage


Cheese Rings 6 Units
Red cabbage 40g
Vinegar 15g
Pear  1/2
Sugar 30g
Butter  20g
Fresh red chili pepper

- Add 20 grams of butter in the saucepan and let it melt.

- Add the half pear in cubes, together with the freshly chopped red chili pepper.

- Add the 30 grams of sugar and a little water.

- Let it cook until it becomes a homogeneous mass.

- In a separate bowl, mix the red cabbage with a little salt and vinegar.

- Fry the cheese rings.

- Finally, plate the cheese rings together with the red cabbage and the pear sauce.
