Tuna and Piquillo Croquettes with Mojo Mayonnaise


Tuna and Piquillo Pepper Croquette Frinca / Prielá 5 u
Garlic 15 g
Paprika 5 g
Cumin 3 g
Sherry vinegar 5 g
Chorizo bell pepper 20 g
Oil 80 g
Water 10 g
Mayonnaise 100 ml
Green olive 3 u
Chopped tomato 20 g


- Prepare the mojo mayonnaise: crush the garlic, paprika, cumin, vinegar, chorizo bell pepper, oil and water. To obtain a texture like a paste. Add to the mayonnaise.


- Fry the Prielá / Frinca Tuna and Piquillo Pepper croquettes.


- Arrange the mojo mayonnaise on the bottom of the plate. Place the croquettes on top.


- Garnish with the olives cut into rings and the chopped tomato.
