Cod Brandade Croquettes with Cream of Truffled Potato Cream


Prielá Cod Brandade Croquette / Frinca 4 u
Violet potato 1 u
Poultry broth 60 ml
Skimmed milk 60 ml
Liquid cream 35 ml
Butter 7g
Black truffle  
Salt and pepper  


- Prepare the potato cream: fry the potato in the butter. Add the truffle and the broth. Cook for 15 min.


- Add the milk and reduce by half. Blend everything with the mixer, add the liquid cream and mix.


- Make potato chips with half of the remaining potato.


- Fry the Cod Brandade Croquettes Frinca / Prielá.


- Place a spoonful of potato cream under each croquette.   

- Decorate the croquettes with the potato chips.
