Croquettes without Chicken with Quinoa

Ingredients

Croquettes without chicken  4 Units 
Microwave Quinoa  75g
Golden apple for compote  50g
Basil  5g
Sautéed green bell pepper, red bell pepper and diced zucchini   
Extra virgin olive oil  

Preparation

- Sauté the vegetables together with the quinoa, season with salt and add chopped basil at the last moment.

- Peel the apples, cut into wedges, cook in the microwave and mash.

- Fry the croquettes and drain the excess oil on absorbent paper.

- Place the sautéed quinoa on the plate in a circular shape. Arrange the croquettes on top.

- Finish by decorating with a dot of applesauce between each croquette and some basil leaves.
